Banting Rusk recipe by Annica’s

On a usual day at Annica’s bakery, we try and invent new recipes, that’s including tasting them….Admittedly it makes me on a cake diet. Not that I would be able to say ‘NO’ for something sweet anyway. It makes me wonder how people like me, who have a sweet tooth, can be on any form of ‘exclusion-of-cake-diet’.  Do they cheat  or go through immense suffering ? …. No, no need for that!

Recently I tested out healthy Banting rusks recipe that i will share:

Banting Rusks recipe

Dry ingredients:
1 cup Coconut Flour
1 cup Almond Flour
1 cup Flaxseed Meal
1/2 cup Desiccated Coconut
1/2 cup Sunflower Seeds
1/2 cup Pumpkin Seeds
1/2 cup Flaked Almonds
1 Tbsp dry Chia Seeds
2 ml Stevia (sugar substitute)
15 ml Baking Powder
Wet ingredients:
3  Eggs
500 ml Natural Unsweetened  Yogurt
150 ml slightly Salted Butter
2 Tbsp Coconut Oil
Cinnamon for sprinkle

Preheat oven to 165c
Mix all dry ingredients together. You can substitute flaked almonds for same quantity of chopped walnuts.
Melt the butter slightly and add coconut oil, add yogurt. Whisk eggs in a separate bowl and add to the wet ingredients. Mix dry and wet ingredients together.
Use baking dish or deep roasting tray. Brush the tray with coconut oil, just enough to grease the base and sides of the dish, don’t leave excess oil in the tray.
Pour the Rusks mix into the tray and sprinkle with cinnamon. Bake  in preheated oven at 165c for 45 minutes. The rusk mix will brown slightly on the sides and on top, that is perfectly fine. Take the pan out of the oven and cut Rusk fingers while still hot. Move the rusk fingers to the wire rack. Place the Rusks back to the oven on wire rack to dry in the oven at 80c for 6hours. Keep the Rusks still drying in the oven overnight , but switch off the oven and keep the oven door slightly open.
